Wonderful tasty shortbread cookies. Just as an aside after reading the other reviewer comments, I keep my butter *cold* when making scones or shortbread and chop the pieces up with a pastry blender. I think this is the key to tender pastry, keeping the butter cold until the product goes into the oven. It works for me at any rate. :)

I use this mix for cookies. roll in a ball and a half walnut on top. Plain but good.

The directions say to "knead" the butter and mix until smooth. I took that mean by hand, literally. I think the butter got too warm from my hands by the time it was incorporated with the dry ingredients. The end result tasted fine but the cookies spread out like cow pies and had a shorter baking time.
