BEWARE OF VIKING MIXERS NOW BECAUSE THEY ARE NOT BUILT IN THE SAME WAY THEY WERE BUILT. I just purchased mine on 4/4/09 and the lever released and the machine was popping up while kneading white sandwich bread dough when it was absorbing the tenth ans last cup of unbleached bread flour using the dough hook. I had to shut it off. For pastry, biscuits, and whipped cream, it works just fine using the paddle and ballon whisk attachments. I called the Viking Range Corporation and spoke with a representative. I got a call back later on that day from the Viking Range Corporation. Apparently the newer models are now designed to pop up if the machine is under a strain like mixing a heavy bread dough. How disappointing is that! Those individuals who have a mixer and bought previously are the only ones who have mixers to withstand the heaviest of doughs. I just bought mine three weeks ago. At any rate, the Viking company called me up and said that they are going to send me a new machine but before doing so, they are going to tighten the latch more than the newer models. Again how disappointing is that! When I told Tom at quality control at the Viking corporation that he should change the advertisement declaring that they cannot now withstand the heaviest of doughs, he said to me that the company is unwilling to put anything out there negative about the Viking mixer. He went on to say that when you want to sell something, a merchant will not say anything is wrong with the product or that the way the new product has changed. He did not say the machine was defective but this is how they are built now. I will keep the Viking mixer when it arrives in the mail, but when after a year is up, and should something go wrong, and I want two mixers in my Kitchen, I will buy the cheaper Kitchen Aid mixer, and put it next to the other Kitchen Aid mixer I have now on my counter that has been working for ten years.

This is the "Cadilac" of all mixers. I recently purchased this to replace a very old and tired Hamilton Beach stand mixer that was still working but wasn't able to handle stiff cookie or bread doughs. The Viking handles them all with ease and doesn't move an inch in the process. This will handle all of your mixing needs from the fluffiest whipped creams to the stiffest bread doughs. The added feature of the rear wheels makes it so easy to move around the counter.
