- Gluten provides yeast bread's structure, and helps it rise and stay risen. Vital wheat gluten provides the extra gluten heavier, whole-grain loaves need to rise their highest.

used it when we lived in new jersey. produced perfect hamburger buns with WHITE flour. no we are in reno. wonder if it will work in high altitude?? thanks

I love to use this in my ABM. It really helps produce a high light loaf. It has become a standard ingredient no matter what type of loaf I'm baking!

I am crazy happy with this product. I like to bake whole wheat rolls, and I got a much better rise. It's a "Must" anytime I bake bread. I just love it.

I don't need to worry about all the whole wheat stuff that I made :) The texture is much better with vital wheat gluten!!

This Vital Wheat Gluten is so much better than anything you could get at the grocery store. I will never be without it!

I added this to my ww bread and it rose higher and lighter with a more tender crumb. I will always use it from now on.

I decided to experiment with this wheat gluten as I like to make 100% whole wheat bread filled with lots of grains. Though I enjoy the whole wheat flavor, the density of my loaves puts me off a little. I added a slightly heaping tablespoon of the wheat gluten per cup of whole wheat flour and now my whole wheat, grain-filled loaves rise beautifully, yielding loaves as soft as pillows. Incredible!

I am so glad I decided to try this! I added it to a Banana Quick Bread recipe that has only KA Whole Wheat flour and Ground Oats. Even with 6 bananas this product softened the crumb dramatically and increased the rise by 1 full inch! Thank you KAF.

Great for whole wheat loaves. My ww bread rises substantially higher (and is therefore lighter) when I use this.

It's very useful, especially making anything with whole wheat/any flour lack of gluten.
