Was a little apprehensive about buying a bread machine because I have had really tall success since I started baking bread in Nov 2011. I stock 15 different grains and many other baking items in my baking pantry. I am blown away with the ZO. When I just need a simple whole wheat or Pumpernickel sandwich loaf or a nice cinnamon whole wheat loaf for my Saturday french toast this is a must have! Bread rises so much better when kneaded in this machine than in my stand mixer. (I also switched to KA bread salt and Fleischmann's yeast when I bought the ZO, and I am using bread flour instead of the all purpose KA flour when AP is called for) I was a bit apprehensive about the recipe book that came with it because I had read the KA blogs and the consensus is that the recipe book is not too great. My opinion is different. Each of the whole grain recipes, with just a few modifications for personal preference, have yielded bread that my family raves about. I do weigh all my ingredients on a scale, in ounces, and have not had to add any flour or water to my recipes cooked in the ZO in order to get a great dough and loaf. I love programming pizza dough to be ready for me to shape and cook when I get home from work. Shaving about 90 minutes off my dinner time, which is healthier than eating too late. (I stray from the recipe and use Semolina, white whole wheat, and bread flour, along with dough relaxer, KA pizza dough flavor, and 2 tbsp of Pizza seasoning in my pizza dough- YUM) Programmed one of the custom 3 spots last night to make a quick batch of tortilla flour and found it VERY simple and effective. I may not have appreciated just how handy this machine is if I had not made so many loaves with my mixer! I am on my 4th lb of instant yeast in 6 months for a family of 4. Don't know how many loaves that makes, but it is almost daily I bake, so this machine is going to get a good and regular workout. Made my first batch of sourdough bread from the KA starter yesterday too- PERFECT English Muffins. Everything I have purchased at KA so far has been of superior quality and the ZO fits right into that trend!

I am very happy with the Zo. I was very skeptical when my husband suggested a bread maker as a gift. I've been baking bread by hand and figured it was blasphemy. However, since KAF recommended it, particularly for kneeding, I looked into it. It works great - I LOVE the simplicity of throwing everything in and having the Zo do the mixing and first rise and then shaping and baking myself. My sourdough comes out even better now. Also - the timer is an excellent feature for fully preparing the bread for mid-week when we might want a fresh loaf for dinner or ready in the AM to take to work for a special treat. The only complaint I have is sometimes it's a little tricky to get the bread out of the pan because the kneeding blade gets stuck in. But, I wrestle with it a bit and it always comes out and I haven't "broken" a loaf yet. I have made the coffee cake recipe in it too and it was great. It's a great new "toy" for me and I'm having lot's of fun with it.

I was a little skeptical about bread machines because I enjoy making many kinds of bread from scratch. Figured it would be smart to try one of the recipes in the instruction book first so I made a whole wheat loaf. Came out PERFECT. Great crust on all sides, high rise, and perfect texture inside. Now I am even more excited about baking bread because the kneading this machine does is far superior to my stand mixer. Because of the Dough cycle I plan to mix, knead, and rise most of my bread in the Z. I will probably still bake most of it in my oven just because of all the shapes I like to make. WILL be using it to mix and rise my pizza dough so I can make my crust as soon as I get home from work. I figured I'd be safe if KA has seven of these in their test kitchen. I'd really like to see more of the KA recipes adapted for this machine, or at least some recommended custom settings for more of the KA recipes.

I have used this machine for the past 6 months, about once a week. I have two other bread machines, which both worked well. The ZO does a better job of kneading all types of dough, so I use it for rolls and coffee cakes, which I shape and bake in the oven. The machine does an excellent job with whole grain breads baked in the machine. All the recipes in the book that I tried worked well, and I adapted some of my old whole grain recipes successfully by using less liquid. Delicate white breads tend to rise too much and then fall. This did not happen with my West Bend machine, but it struggled with whole grain loaves. So when I want to bake in the machine, I use the Zo for whole grain, and the old machine for white bread. The Zo also did a good job on a beer quick bread recipe, which I used without adjustment on he cake cycle. This is a good machine for heavy loaves, so I do recommend it for that purpose. Thank you for the feedback. If you haven't done so already, you might try cutting back on the liquid for your delicate white breads as well. The rising, then falling when baking is an indication there may be too much moisture in the dough. Our Baker's on the Hotline would be happy to help troubleshoot if you continue to have this problem. I've owned one of these since December, 2010 (a holiday present to myself), and it is a true work horse. I've had a few other bread machines in the past, and none were as versatile - but moreover, none stood up to long-term repeated use very well. I will confess, I do not use it for the full cycle much anymore, although it does make a perfectly nice loaf. Mostly I use it on a 15-minute custom cycle to mix my sponge, and then cover it overnight and add the remaining ingredients to it in the morning to run the main knead cycle. I've been doing this to make one or two loaves and a dozen bagels every week for almost a year and a half, and it works as well now as the day I started with it. I highly recommend this machine.

We received our new Zo a few weeks ago and we cannot believe how nice this machine is. We had read where people had various troubles with it, but wanted to try it for ourselves. What I have found is that if you follow the instructions just as they are written, the machine works fabulously and the bread is incredibly good. The only thing I am sorry about at this point is that we waited so long to buy it! My other comment is that I am now having to search for uses of leftover bread. Baking in the Zo is so much fun, we keep making too much bread. Tonight, I am trying to make Portugese bread. It will be the first time of trying to convert a regular recipe to work in a machine. They tell you how to do that, too, so I am certain it will come out well. (Of course I should mention that I am using all fresh KAF ingredients. They are the best!) Happy bread baking everyone!
