WHY WE LOVE IT: See the long loaf and rolls pictured above? They represent examples of what we consider the Zo's best use: kneading dough, then taking it out to shape as you please and bake in your oven. The Zo does indeed knead dough more effectively—and with much less user-time and effort—than any other appliance we've tried. We've been using our -X20 for several months and are very satisfied with it for what we need it for. We bought it to make pizza dougn and it does a fine job of that. We put the dough ball in the refrigerator to rise overnight and deveop its full flavor, which improves it a great deal. We did try a basic loaf with it and were not impressed, but did not expect to be. Recently, however, we have been having good successes with fruit quick breads, which make wonderful gifts and party treats.

I've baked with this machine for a year and a half now (the white one) and have always had trouble with misshapen loaves and loaves that are smaller and don't bake right on one end. It sometimes makes a nice loaf, often doesn't. I've played with flours and measurements and weighed the ingredients and still don't get consistent results. I sent it back to Zo for repair and they baked one loaf and said it was just me. King Arthur was helpful and kind, but their suggestions didn't solve the problem either. I've had a bread machine since August of 1992 and this is the only one I've had trouble with. I own three now, and don't have these issues with the mini Zo (PERFECT every time!) or the other machine, so I don't think the problem is me. There is some defect in some of these machines because you see some people that keep having this problem. I hope Zo works it out someday!

Flawless. My new Zo' arrived three days ago and since then I've baked four different breads, al flawlessly Though I've made quite a bit of bread before, this is my first bread machine. I love breadmaking but hate how time-consuming it is - a single batch of bread can consume an entire day. No More. Easy. Simple. Fun. In fact, easy enough that I feel OK experimenting (if you have to invest 3/4 of a day in making a loaf of bread, you're not likely to take the chance of screwing it up). So now I can experiment, and if it doesn't work out all I've wasted is a few ingredients.

I wanted a bread machine to conveniently make home-made bread with King Arthur quality products. This expensive machine falls short. I live in a high-altitute location, over 7,000 ft. The recipes in the King Arthur cookbook, that work PERFECTLY with the high-altitude adjustments don't work well in this machine, which cautions to use their recipes whenever possible. It took about a dozen ruined loaves changing the ingredients a little at a time to get a loaf of white bread right. I didn't have this problem with the Breadman. The bakers at King Arthur tried to be helpful, but it took constant experimentation to get it right. I'm not a 'happy baker', I'm a guy that just wanted high quality & convenience. I never wanted to run a test kitchen, but now know how hard a test kitchen is to run. I wouldn't be pleased with another appliance, or car that was so balky to use. Question for the IRS: if I donate this to a non-profit to use as a target in their next turkey shoot, can I take the market value as a tax deduction? Can't somebody make a convenient machine that makes normal looking loaves, works reliably and is worthy of high quality products like King Arthur? WHERE FORE ART THOU KITCHEN AID !!!!

I recently purchased this bread machine after reading many of the reviews posted at KAF. I would like to say that the very first loaf I baked in it, a light rye recipe, came out picture perfect with a nice texture. The top of the loaf, however, did not brown. Other than that, it was great. The second loaf, a 100% whole wheat, came out higher on one side than the other, something other bakers have complained about. I decided to experiment, and after the initial kneading period, I looked at the dough before the first rise. It was off center and not evenly shaped. I took it out, reshaped it briefly by hand, and centered it in the pan. This worked well and the next loaf came out evenly shaped. The flavor and texture of the breads (so far, I have just used the regular full baking cycle) has been amazingly good. This is the first bread machine I've every owned, but I've baked bread by hand for years. I must admit that the quality of the machine-baked bread compared to the handmade bread is very comparable. I would recommend this machine to anyone who is serious about baking and who doesn't want to purchase bread in the store that has ingredients in it that you don't want to eat. I also experimented with the altitude adjustments recommended in the owner's manual, but they ultimately didn't make a huge difference in the outcome of the recipes I tried so far.

I bought mine in 2003 and use it almost every other day. I follow the directions and it works great for me! I bake mine in the oven because I make braided breads, etc...and like to use different baking methods. Different kinds of washes and toppings. This is a Godsend for me. I hate hand kneading and this saves the hands and back!!! Why people don't follow directions is beyond me. But if you do...you will love this machine. Have fun and mine is still going strong. One of the best investments I have ever made! :)

I have wanted a Zo for many years, but I waited for my Breadman to die before I bought one. After so much anticipation, I am very disappointed with the Zo. I have made 4 different loaves in the machine and not one of them has baked correctly. It seems to cook faster on the left side than the right side. All of the loaves are browned on top on the left and over risen and pasty on the right. All of the bottom and side crusts are too done to eat. I have taken the loaves out to shape before the 3rd rise, I have put foil over the window, I have left the dough very slack - nothing seems to help. All the loaves are lopsided, too done on the bottom and sides, brown only on the left top and are taller and pasty on the top right. I really don't want a machine that only works to knead dough. I think I will be returning this one.

My 13 year old 1.5lb machine finally gave out and after extensive research, I purchased a Zojirushi 2lb machine. We have used it 1x a week since January and love it. No problems. Mixes well, timer is great. Only issues is converting 1.5 to 2lb recipes as it is important to make 2lb recipes to get the right results.

I LOVE this machine. I bring bread now as a hostess gift and my friends love it and even request it. I think it's much healthier also. I have started making Swedish Limpa, a family favorite, for our reunions, and everyone raves about those beautiful loaves.
