Country Blueberry Buckle

Blueberry buckle is synonymous with breakfast in the summertime. In the absence of time and/or fresh blueberries, our Country Blueberry Muffin Mix makes quick-and-easy work of this coffee cake. Serve it warm from the oven with a melting pat of butter for an ultimate breakfast treat.

Topping
  1. 3/4 cup Country Blueberry Muffin Mix
  2. 1/2 teaspoon cinnamon
  3. 3 tablespoons (1 1/2 ounces) melted butter
Cake
  1. remainder of Country Blueberry Muffin Mix
  2. 1/2 cup (8 tablespoons, 4 ounces) softened butter
  3. 2 large eggs
  4. 3/4 cup milk
Instructions
  1. Start by measuring 3/4 cup of the muffin mix into a small bowl, for the topping. Add the cinnamon and melted butter. Stir gently until the mixture becomes crumbly. Set it aside.
  2. In a medium-sized bowl, beat together butter and half the mix until well blended. Add the eggs one at a time, beating well after each addition. Beat in the remaining mix alternately with the milk, half of each at a time.
  3. Pour the batter into a lightly greased 8 square or 9 round pan, and sprinkle with the topping.
  4. Bake the coffeecake on the middle rack of a preheated 350°F oven for 35 to 40 minutes, until the middle springs back when lightly touched with your finger, and a cake tester inserted into the center comes out clean.
  5. Remove it from the oven, and serve warm, right from the pan.
