Chocolate Icebox Cookies

Cutout cookies don't have to be vanilla or gingerbread! Try these crisp chocolate cutouts, a welcome treat for your favorite chocolate-lovers.

Ingredients
  1. 1 box King Arthur Gluten-Free Sugar Cookie Mix
  2. 2 ounces unsweetened chocolate, melted
Directions
  1. Prepare rollout cookie dough as directed on the box, adding the melted chocolate to the dough along with the rest of the ingredients.
  2. Chill the dough for 45 to 60 minutes, until it's firm enough to roll.
  3. Place the dough on a lightly floured surface, and roll it into a smooth 12" log about 1 1/2" in diameter. Wrap the log in plastic wrap and freeze it overnight, or for up to 2 weeks. If the log wasn't completely round going into the freezer, check it after about 15 minutes and reshape before it gets too firm.
  4. When ready to bake, preheat the oven to 350°F. Grease a baking sheet, or line it with parchment.
  5. Slice the log into 1/4"-thick cookies, and place them 2" apart on the prepared pan.
  6. Bake the cookies for 16 to 18 minutes; feel the center to make sure they're set.
  7. Remove the cookies from the oven, and cool them right on the pan, or on a rack.

Yield: 2 1/2 to 3 dozen cookies.
