Cinnamon-Sugar Cookie Crisps

These buttery, flaky cutout cookies are crunchy/sweet and nicely spicy, perfect with a cup of coffee.

Ingredients
  1. 1 box King Arthur Gluten-Free Pie Crust Mix
  2. 1/4 cup sugar
  3. 1 1/2 teaspoons cinnamon
  4. Sparkling sugar, optional
Directions
  1. Make and chill the pie crust as directed on the box.
  2. Preheat the oven to 400°F. Grease a baking sheet, or line with parchment paper.
  3. Roll the dough 1/8" to 1/4" thick and cut as desired; a 2" round cookie cutter works well here. Place cutouts 1" apart on the prepared pan.
  4. Mix the cinnamon and sugar. Sprinkle generously atop the cutouts. Sprinkle with sparkling sugar as well, if desired.
  5. Bake the cookies for 14 to 18 minutes, until golden brown both top and bottom.
  6. Cool completely, then store in an airtight container.

Yield: 45 to 70 cookies, depending on thickness.
