Oatmeal Raisin Cookies

Who would ever turn down an oatmeal raisin cookie? Our sugar cookie mix easily transitions to this comfort-food classic with the addition of a few simple ingredients.

Ingredients
  1. 1 box King Arthur Gluten-Free Sugar Cookie Mix
  2. 1/2 cup brown sugar
  3. 2 cups quick-cooking gluten-free oats
  4. 1 cup raisins, dried cranberries, chopped walnuts or pecans, or a combination
  5. 1 teaspoon ground cinnamon
  6. 1 teaspoon vanilla extract
  7. 1 teaspoon baking soda
  8. 12 tablespoons (3/4 cup) softened butter
  9. 2 large eggs
Directions
  1. Preheat the oven to 350°F.
  2. Mix all of the ingredients to make a smooth dough.
  3. Drop the dough by rounded tablespoonfuls 3" apart onto an ungreased baking sheet.
  4. Bake the cookies for 14 to 18 minutes, until golden brown.
  5. Remove them from the oven, and cool for 5 minutes on the pan; transfer to a rack to finish cooling. Store airtight at room temperature.

Yield: about 3 dozen cookies.
