Cream Cheese-Filled Scones

Dress up your scones by filling them with sweetened cream cheese; or portioning them into cute, bite-sized treats for a crowd.

Cream Cheese-Filled Scones
  1. Prepare the scone dough as directed on the package, and scrape it onto a well-floured work surface. Pat or roll it into a rough 9" square, a scant 3/4" thick.
  2. Beat together 4 ounces cream cheese with 2 tablespoons sugar. Spread this filling evenly over the dough. Fold one edge into the center and over the filling, as though you were folding a letter. Fold the remaining edge over the center to complete the three-fold. You'll now have a rectangle.
  3. Gently pat or roll the rectangle to form a 4" x 16" rectangle; it'll be between 3/4" and 1" thick. Cut the rectangle into four 4" squares. Cut each square in half diagonally to make a triangle. Gently press the triangles into the lightly greased wells of a scone pan; you'll need to reshape them a bit to make them fit. Or place the scones on a parchment-lined baking sheet.
  4. Bake the scones for 14 to 16 minutes, until they're slightly firm to the touch. Remove them from the oven, and transfer them to a rack to cool.
  5. Yield: 8 filled scones
Mini Scones
  1. Scoop heaping tablespoonfuls of your dough onto a greased or parchment-lined baking sheet - a tablespoon cookie scoop works well here - and sprinkle with sparkling sugar, if desired.
  2. Bake the mini scones in a preheated 400°F oven for about 12 minutes, remove them from the oven, and drizzle with icing, if desired. Serve warm.
  3. Yield: 28 mini scones
