Maple Cornbread Mix

Cornbread isn't just an accompaniment to chili anymore. It can be dressed up to go with most any dish. Stir in any of these extra ingredients, or experiment with some of your own.

Corn & Scallion
  1. 1/2 cup (2 ounces) fresh/cooked or frozen/thawed corn kernels
  2. 1/2 cup (about 1 1/2 ounces) chopped scallions (3 or 4 scallions, white and green part)
Bacon, Cheddar & Chive
  1. 1/4 cup (4 ounces) cooked, crumbled bacon
  2. 3/4 cup (3 ounces) grated cheddar cheese
  3. 2 tablespoons snipped fresh chives
  1. 1 1/2 cups (9 ounces) fresh or frozen blueberries
  1. 1/2 cup (2 1/2 ounces) dried cranberries
  2. 1/2 cup (2 ounces) chopped walnuts

Our cornbread mix can be made in the Zojirushi bread machine; use the cake cycle, light crust setting.

It's easy and fun to dress up your favorite treats for homemade gifting. Our maple cornbread mix is particularly gift-able when baked in a star pan with a generous drizzle of maple glaze.

Maple-pecan cornbread
  1. 1 cup chopped pecans
  1. Preheat the oven to 400°F. Lightly grease a star bake-and-give pan; or two medium bake-and-give loaf pans.
  2. Prepare the maple cornbread mix according to package instructions.
  3. Stir in chopped pecans; toasted pecans will add more depth of flavor. Pour the batter into the pan(s) of your choice.
  4. Bake the cornbread for 30 to 35 minutes, until a tester inserted into the center comes out clean. Remove from the oven and cool on a rack.
Maple Glaze
  1. 1/2 cup glazing or confectioners' sugar
  2. pinch of salt
  3. 2 tablespoons maple syrup
  1. Combine sugar, salt, and maple syrup. Stir until everything is well-blended. Drizzle the glaze over the cooled cornbread(s).
  2. Wrap as desired.

Yield: 1 star-shaped loaf, or 2 standard loaves
