Individual S’more Cheesecake Brownies

Separately, our Vanilla Bean Cheesecake Bar and Fabulous Fudge Brownie mixes are so fabulously rich, it's hard to believe they're made from a box. Together, they're a match made in heaven, combining forces for an enticingly decadent s'more experience.

Graham cracker base
  1. 6 tablespoons (3 ounces) melted butter
  2. Vanilla Bean Cheesecake Bars crust mix
Brownie batter
  1. 8 tablespoons (4 ounces) melted butter
  2. 2 tablespoons (1 ounce) water
  3. 3 large eggs
  4. Fabulous Fudge Brownie mix
Cheesecake batter
  1. Vanilla Bean Cheesecake Bars filling mix
  2. 2 8-ounce packages cream cheese, softened
  3. 3 large eggs
Topping
  1. about 2 cups mini marshmallows
Instructions
  1. Preheat the oven to 325°F. Lightly grease the cups of two standard 12-cup muffin pans.
  2. Mix the melted butter with the crust mix.
  3. Divide the crumbs evenly among the prepared muffin cups – a scant tablespoon is about the amount you'll use per cup – and press them into the bottoms of the cups.
  4. Set the pans aside while you prepare the two batters.
Making the brownie batter
  1. Whisk together the butter, water, and eggs.
  2. Add the brownie mix and blend vigorously until shiny.
Making the cheesecake batter
  1. Combine the filling mix and cream cheese, mixing until smooth.
  2. Add the eggs one at a time, mixing until well blended and scraping the sides and bottom of the bowl.
Assembling
  1. Scoop a scant tablespoon of brownie batter over the crust in each cup; you should have about 1/2 cup extra batter left over.
  2. Scoop a heaping tablespoon of cheesecake batter over the brownie batter, using up all the cheesecake batter.
  3. Dollop a final scant teaspoon of brownie batter onto the cheesecake batter, and swirl the two layers together as much as you like.
  4. Top with 6 to 8 mini marshmallows each.
  5. Bake the brownies for 15 to 18 minutes, until a cake tester inserted into the center comes out clean.

Tip

For that toasted, campfire-style marshmallow effect, turn your oven to broil during the final minute of baking, and watch the brownies closely – the marshmallows can easily go from toasty brown to burnt black under high heat.
