Chunky Oat Drop Cookies

Ingredients
  1. Essential Goodness Ancient Grain + Cranberry Super Slice Bread Mix
  2. 1/2 cup (8 tablespoons) softened butter
  3. 0-4 tablespoons demerara or turbinado sugar*
  4. 2 large eggs
* Regular white or brown sugar will work, but they will give you a less tender cookie. This cookie will work fine without any added sugar as well, but a little extra sweetness can really help to round out the flavor and improve the cookie's overall texture. Feel free to add up to 1/4 cup (4 tablespoons) as desired.
Instructions
  1. Preheat the oven to 375°F. Grease or line two baking sheets.
  2. Stir together the loaf mix, butter, sugar (if using) and eggs, mixing until combined and scraping the bowl as needed.
  3. Shape the dough into rounded tablespoons or teaspoons and place the cookies on the prepared baking sheets, 3" apart. Flatten dough to 1/2" thick before baking.
  4. Bake tablespoon-sized cookies for 12 to 15 minutes, teaspoon-sized cookies for 9-11 until firm and set to the touch (cookies may not turn golden brown on top, but bottoms should brown).
  5. Cool the cookies for 5 minutes on the pan, then transfer them to a rack to finish cooling. Store in an airtight container.
  6. Yield: 24 tablespoon cookies, 48 teaspoon cookies
