Easy Baked Pancake Squares

Who wants to stand at the stove madly flipping pancakes while friends and family are impatiently waiting? Turn our pancake mix into a baked pancake/coffeecake, and everyone's happy!

Pancake batter
  1. Pancake mix
  2. 1/4 cup granulated or brown sugar
  3. 1/4 cup melted butter or vegetable oil
  4. 2 1/4 cups milk
  5. 2 large eggs
Topping
  1. 1 to 2 cups chopped fresh fruit, berries, chocolate chips, or nuts
  2. Cinnamon sugar (optional)
Instructions
  1. Preheat the oven to 350°F. Lightly grease a 9" x 13" pan.
  2. Combine the mix, sugar, melted butter or oil, milk, and eggs, stirring until nearly smooth. Allow the batter to rest for 5 minutes, to thicken.
  3. Pour the batter into the prepared pan, spreading it to the edges of the pan and smoothing it out.
  4. Sprinkle your choice of topping over the batter. Dust with cinnamon sugar, if desired.
  5. Bake for 25 to 30 minutes, until the center springs back when gently pressed and the edges are starting to brown.
  6. Remove the pan from the oven. Cut into squares or bars and serve warm, with maple syrup.

Yield: 8 to 12 servings
