Maple-Glazed Pecan Scones

Create scones from plain pancake mix? It's simple. And these breakfast or teatime treats, scented with maple syrup and studded with pecans, are absolutely heavenly.

Scones
  1. 1/2 box pancake mix
  2. 3 tablespoons sugar
  3. 1 large egg
  4. 2/3 cup heavy or whipping cream
  5. 1/4 teaspoon salt
  6. 1/2 cup chopped pecans
Glaze
  1. 3/4 cup confectioners' sugar, sifted
  2. 1 tablespoon maple syrup
  3. 1 to 2 tablespoons heavy cream
Instructions
  1. Preheat your oven to 400°F. Lightly grease a baking sheet, or line it with parchment.
  2. To make the scones: Stir together all the scone ingredients just until thoroughly combined.
  3. Scoop the batter by the 1/4- to 1/3-cupfull onto the prepared baking sheet.
  4. Bake the scones for 16 to 18 minutes, or until they're golden brown on both top and bottom. Remove the scones from the oven.
  5. To make the glaze: Stir together all the glaze ingredients until smooth. Start with 1 tablespoon cream, adding more to reach the desired consistency.
  6. Allow the scones to cool until they're no longer hot to the touch. Drizzle with the glaze before serving.

Yield: 6 to 8 scones, depending on size
