Crisp, light waffles are simple to make: all you need is a waffle iron, and our yummy pancake mix.
- Pancake mix
- 1/2 cup melted butter or vegetable oil
- 2 1/4 cups milk
- 2 large eggs
- Preheat your waffle iron, and grease it generously.
- Combine the mix, melted butter or oil, milk, and eggs, stirring until nearly smooth. Allow the batter to rest for 5 minutes, to thicken.
- Bake the waffles in your waffle iron according to the manufacturer's instructions.
Yield: six 6" round Belgian-style waffles
