Piña Colada Cupcakes

Cupcakes
  1. Essential Goodness Coconut Cupcake Mix
  2. 4 tablespoons unsalted butter, softened
  3. 1 large egg
  4. 1/2 can (8 ounces) crushed pineapple, drained
  5. 1 tablespoon pineapple juice
Frosting
  1. Essential Goodness Coconut Frosting Mix
  2. 6 tablespoons unsalted butter, softened
  3. 2 teaspoons pineapple juice
  4. 1/2 can (8 ounces) crushed pineapple, drained (for topping)
Instructions
  1. Combine the cupcake mix with the butter, mixing until the mixture becomes sandy. Add egg and mix until just combined. Add the drained pineapple and pineapple juice, mixing until just combined.
  2. Portion into 6 lined muffin wells using 2 slightly heaping tablespoon scoops of batter.
  3. Bake at 350°F on the middle rack of the oven until the cakes are done; about 20 to 22 minutes.
  4. Combine frosting mix, butter, and pineapple juice. Beat until fluffy.
  5. Top baked cupcakes with drained pineapple. Pipe frosting on top of the pineapple for a delicious surprise!
