Double Chocolate Cookie Cheesecake Bars

Cheesecake, the chocolate cookie way: This luscious and decadent cake is fast and easy with our mix.

Cheesecake Crust
  1. Essential Goodness Vanilla Bean Cheesecake Bar Crust mix
  2. 4 tablespoons melted butter
Cheesecake Filling
  1. Essential Goodness Vanilla Bean Cheesecake Bar Filling mix
  2. One 8oz package cream cheese, softened
  3. 1 large egg
Double Chocolate Cookie Dough
  1. Essential Goodness Double Chocolate Cookie Mix
  2. 6 tablespoons softened butter
  3. 1 large egg
Instructions
  1. Preheat the oven to 350°F. Lightly grease a 9" x 13" pan, or line it with parchment.
  2. To make the crust: combine the crust mix and melted butter, stirring until uniform crumbs form. Press the crumbs firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes, until it's beginning to firm up slightly. Remove it from the oven.
  4. To make the filling: beat the filling ingredients together for 30 seconds on low speed and 2 minutes on medium speed, scraping the bowl as needed. Set it aside.
  5. To make the chocolate chocolate chip cookie dough: stir together the cookie mix, butter, and egg, scraping the bowl as needed.
  6. Spread the filling over the hot crust. Break the cookie dough into small pieces and sprinkle them atop the filling.
  7. Bake the bars for 24 to 30 minutes, until the cheesecake filling is beginning to brown on top and the center feels fairly firm to the touch (a little give in the center of the pan in OK).
  8. Remove the bars from the oven. Allow them to cool for 1 hour at room temperature, then chill them in the refrigerator for at least 1 hour before cutting and serving.

Yield: one 9" x 13" pan
