Decorated Rollout Cookies

Decorating rollout cookies is one of our favorite holiday baking traditions, and these spiced cookies are the perfect edible canvas for any frostings or decorations you like.

Rollout Cookies
  1. Essential Goodness Gingerbread Cake + Cookie Mix
  2. 1 stick (8 tablespoons) butter, softened
  3. 1 large egg
  4. 1 tablespoon water
Easy Glaze
  1. 1 cup confectioners' sugar
  2. 3 to 4 teaspoons water*

*substitute 1/2 teaspoon vanilla extract for 1/2 teaspoon water, if desired.

Instructions
  1. Combine all ingredients and stir until smooth.
  2. Divide the dough in half, wrap, and refrigerate for at least two hours or overnight.
  3. Preheat oven to 350°F. Grease or line a baking sheet with parchment.
  4. Roll dough on lightly floured surface, 1/8"-thick for crispier cookies or 1/4"-thick for chewier cookies.
  5. Cut into shapes and transfer to prepared baking sheet.
  6. Bake for 12/16 minutes, or just until set for thinner cookies.
  7. Cool completely before icing.
  8. To make icing, combine confectioners' sugar with 3 teaspoons water, stirring to make a thick, paste-like mixture.
  9. Stir in more water, 1/4 teaspoon at a time, just until the glaze is pourable but still holds its shape when drizzled or spooned onto a flat surface.
  10. Transfer the glaze to a piping or zip lock bag, and cut off the very tip of the piping bag's point or the zip lock bag's corner.
  11. Pipe the glaze in the desired pattern.

Yield: 20 1/4" cookies or 40 1/8" cookies
