Soft and Chewy Drop Cookies

Fragrant with warm gingerbread spice, these easy-to-bake drop cookies have an utterly addictive texture that's both soft and chewy all at once.

Ingredients
  1. Essential Goodness Gingerbread Cake + Cookie Mix
  2. 1 stick (8 tablespoons) butter, softened
  3. 1 large egg
  4. 2 tablespoons water
  5. 1/4 cup brown sugar
  6. Granulated sugar, for coating
Instructions
  1. Preheat oven to 375°F.
  2. Stir together mix, butter, egg, water, and brown sugar until well combined; scrape bowl as needed.
  3. Scoop dough by rounded tablespoonfuls, roll in granulated sugar, and place on a lightly greased or parchment-lined baking sheet, 3" apart.
  4. Bake for 11-13 minutes.
  5. Cool for 5 minutes on pan, then transfer to a rack to finish cooling. Store in an airtight container.
