Luscious Lemon Cheesecake Bars

Crust
  1. Crust mix
  2. 4 tablespoons butter, melted
Filling
  1. Filling mix
  2. Two 8-ounce packages cream cheese
  3. 3 large eggs
Instructions
  1. To prepare the crust: Preheat the oven to 325°F. Lightly grease an 8" x 8" x 2" or 9" x 9" x 2" square pan.
  2. Stir together the crust mix and melted butter until uniform crumbs form.
  3. Press the crumbs into the bottom and slightly up the sides of the prepared pan.
  4. Bake the crust for 14 to 16 minutes. Remove it from the oven.
  5. To prepare the filling: Place the filling ingredients into a bowl and beat at low speed for 30 seconds; then on medium speed for 1 minute, scraping the bowl if necessary.
  6. Spread the filling over the hot crust.
  7. Bake the bars for 30 minutes, until the filling appears set aside from a very small spot right in the middle, which will jiggle when you shake the pan.
  8. Remove the bars from the oven, and cool for 1 hour on a rack. Chill for at least 3 hours before cutting and serving.

Yield: 16 bars
