Zesty Lemon Coconut Bars

Lemon and coconut complement one another beautifully in this super-easy lemon bar riff. There's no need to prepare crust and filling separately; just mix everything together, bake, and enjoy!

Dough
  1. Crust mix
  2. Filling mix
  3. 8 tablespoons softened butter
  4. 2 large eggs
  5. 1/2 teaspoon vanilla extract
  6. 1/4 cup King Arthur Unbleached All-Purpose Flour
  7. 3 cups shredded sweetened coconut
Topping
  1. 3/4 cup shredded sweetened coconut
Instructions
  1. Preheat your oven to 350°F. Lightly grease an 8" square pan or 9" round pan.
  2. Combine all of the dough ingredients, mixing until stiff.
  3. Press the dough into the prepared pan.
  4. Top with the 3/4 cup coconut.
  5. Bake the bars for 32 to 36 minutes, until the edges are lightly browned and starting to pull away from the edges of the pan.
  6. Remove the bars from the oven, and cool fully before cutting and serving.

Yield: 16 bars
