Peanut Butter and Banana Pancakes

Peanut butter and banana is a marriage made in baking heaven — our light, tender pancakes are the perfect canvas for the sweet, nutty flavors.

Ingredients
  1. Essential Goodness Protein Pancake Mix
  2. 1/4 cup creamy peanut butter
  3. 4 tablespoons oil
  4. 2 1/4 cups milk
  5. 2 large eggs
  6. 1 to 2 ripe bananas
Instructions
  1. Set griddle to medium-low, about 300°F.
  2. Chop the banana(s) into very small pieces, no larger than the tip of your pinky. Set aside.
  3. Stir together the peanut butter and oil until fully combined; then add the eggs, milk, chopped bananas, and pancake mix. Stir until just combined. There may be some small lumps, that's okay! Let rest 5 minutes while the griddle is pre-heating.
  4. Grease griddle according to the manufacturer instructions and portion pancake batter out using a 1/4 cup. Cook for 2-3 minutes or until the bottom is browned and the top has visible bubbles. Flip and cook on other side for 1-2 minutes.

Yield: 24 pancakes
