Cinnamon Streusel Muffins

It's easy to turn this delicious coffeecake into individual muffins, perfect for snacks, on-the-go breakfast, or a bake sale.

Topping
  1. Topping mix
  2. 4 tablespoons melted butter
Muffins
  1. Cake mix
  2. 1/4 cup vegetable oil
  3. 3/4 cup milk
  4. 2 large eggs
Instructions
  1. Preheat the oven to 375°F.
  2. Combine the topping mix with the melted butter to form large crumbs; set it aside.
  3. Stir together the cake mix, oil, milk, and eggs, mixing until well combined and scraping the bowl as needed.
  4. Fold half the prepared topping (a generous 3/4 cup) into the batter.
  5. Divide the batter evenly among 14 greased or paper-lined muffin cups.
  6. Sprinkle with the remainder of the topping.
  7. Bake the muffins for 15 to 18 minutes, until a toothpick inserted into the center of one comes out clean.
  8. Remove the muffins from the oven, and cool in the pan for 5 minutes before transferring to a rack to finish cooling.
