Holiday Gingerbread Crumb Cake

The aroma of holiday spices will fill your kitchen as this coffeecake mix becomes a dark and delicious, molasses-enriched crumb cake. Serve it with coffee on a cold afternoon.

  2. 4 tablespoons melted butter
  3. 1 cup chopped walnuts
Cake
  1. Cake mix
  2. 1 1/2 teaspoons ginger
  3. 1 teaspoon cinnamon
  4. 1/4 teaspoon cloves
  5. 1/4 cup molasses
  6. 1/4 cup vegetable oil
  7. 3/4 cup milk
  8. 2 large eggs
Instructions
  1. Preheat the oven to 350°F. Lightly grease a 9" square or 9" x 13" pan.
  2. Combine the topping mix with the melted butter to form large crumbs; set it aside.
  3. Stir together the cake mix and spices.
  4. Add the molasses, oil, milk, and eggs, stirring together until smooth.
  5. Fold half the prepared topping (a generous 3/4 cup) into the batter.
  6. Spread the batter into the prepared pan.
  7. Sprinkle the remaining topping evenly over the batter, pressing it in gently.
  8. Bake the 9" cake for 40 minutes; the 9" x 13" cake for 30 to 35 minutes, until the center is firm to the touch and a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven, and serve it right from the pan, warm or at room temperature.
