Celebration Mini Cheesecakes

Throwing a dinner party? Save yourself the hassle of last-minute dessert plating by offering mini cheesecakes on a pretty platter. Mini cheesecakes also sell like hotcakes at a bake sale.

Crust
  1. Crust mix
  2. 4 tablespoons melted butter
Filling
  1. Filling mix
  2. Two 8-ounce packages cream cheese, softened
  3. 2 large eggs
Instructions
  1. Preheat the oven to 350°F. Line 18 standard muffin cups with paper liners.
  2. Combine the crust mix and melted butter, stirring to make uniform crumbs.
  3. Spoon 1 heaping tablespoon of crust into each muffin cup, pressing it firmly and evenly into the bottom of the cup.
  4. Bake the crusts for 10 minutes, until beginning to firm.
  5. While the crusts are baking, prepare the filling: Mix the filling mix and cream cheese on medium-low speed until smooth. Add the eggs one at a time, mixing just until blended. Scrape the bowl after each addition.
  6. Spoon about 2 tablespoons of filling over the hot baked crust in each cup, spreading it to the sides of the cup.
  7. Bake the cheesecakes for 18 to 22 minutes, until the filling is set in the center and feels firm when gently pressed.
  8. Remove from the oven, and cool the cheesecakes in the pan for 1 hour. Carefully remove them from the pan and refrigerate for at least 2 hours, until chilled; overnight is fine.
  9. To serve, top with your favorite sauce or topping.
