Apple-Cinnamon Bars with Peanut Butter Glaze Recipe

An appealing flavor combination for kids and adults, equally well suited to coffee break and lunch break.

Choose your measure:


  • 3/4 cup unsalted butter
  • 1 1/3 cups brown sugar
  • 1 large egg
  • 1 cup applesauce
  • 2 tablespoons boiled cider or undiluted apple juice concentrate
  • 3/4 teaspoon baking powder
  • 1 1/2 teaspoons salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 3/4 cup quick-cooking oats
  • 1 1/4 cups King Arthur White Whole Wheat Flour
  • 1 cup finely diced apples, peeled or not; your choice


  • 1 cup smooth peanut butter
  • 6 tablespoons honey

  1. Preheat the oven to 350°F. Lightly grease a 9" x 13" pan.
  2. To make the bars: Beat the butter and sugar in a medium bowl. Beat in the egg, then scrape the sides and bottom of the bowl. Beat in the applesauce, boiled cider or apple juice concentrate, baking powder, salt, and spices. The mixture will look curdled.
  3. Stir in the oats and flour, mixing thoroughly. Fold in the apples. Spoon the batter into the prepared pan.
  4. Bake the bars for 35 to 40 minutes, until their center is moist but not liquid. Remove them from the oven and let them cool completely before spreading with the glaze.
  5. To make the glaze: Heat the peanut butter and honey together until the peanut butter softens. Stir the mixture until smooth, and spread on the cooled bars.
