Carrot Fritters Recipe

These crispy, orange-colored fried patties provide a different take on an ordinary vegetable. They're also a very nice way to use some some of those big knobby carrots from your summertime garden.

Choose your measure:

  • 5 to 6 medium-sized carrots, finely chopped or grated (not puréed)
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/8 teaspoon cumin, optional
  • 1/4 cup King Arthur Unbleached All-Purpose Flour
  • 1/4 cup (4 tablespoons) butter


  1. Mix carrots, eggs, salt, sugar, cumin (if desired), and flour in a medium-size mixing bowl. Set aside.
  2. Melt enough of the butter in a medium-size skillet to just cover the bottom of the pan.
  3. Drop the batter by tablespoons into the hot butter.
  4. Fry fritters for a couple of minutes on each side, or until they're set and golden brown. Cool on absorbent paper.
