1. Mix carrots, eggs, salt, sugar, cumin (if desired), and flour in a medium-size mixing bowl. Set aside.

  2. Melt enough of the butter in a medium-size skillet to just cover the bottom of the pan.

  3. Drop the batter by tablespoons into the hot butter.

  4. Fry fritters for a couple of minutes on each side, or until they're set and golden brown. Cool on absorbent paper.
