Ingredients

Choose your measure:

  • 13.5-ounce can full-fat coconut milk
  • 1 cup dairy-free milk of choice
  • 1/2 cup maple syrup (or honey, agave, or brown rice syrup)
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt

Instructions

  1. Add all the ingredients to a blender or food processor and blend on high until thick and creamy, about 1 to 2 minutes.
  2. Let the mixture chill for 2 to 4 hours.
  3. Add the mixture to an ice cream maker and churn according to the manufacturer's instructions.
  4. Transfer the frozen mixture to a freezer-safe container and store in the freezer until ready to enjoy.
  5. When serving, if frozen rock hard, let it thaw for 10 minutes before scooping.
  6. Yield: 1 quart.
