Dark Chocolate Ginger Bark

We love the pairing of ginger and chocolate — the spicy chew of diced crystallized ginger plays nicely with the silky richness of dark chocolate.

Choose your measure:


  1. Line a baking sheet with parchment paper or waxed paper.
  2. Melt the dark chocolate — in a microwave, or in a saucepan set over very low heat — and mix it with about 1/2 cup of the ginger.
  3. Spread the melted chocolate into an 8" x 12" oval on the prepared baking sheet.
  4. Sprinkle the rest of the ginger on top, pressing it in gently.
  5. Allow the chocolate to cool until hardened, then break into chunks.
  6. Yield: about 2 dozen pieces.
