Gluten-Free Amaranth-Almond Bars Recipe

Two of the three layers in these bars feature amaranth flour, one of our most distinctive gluten-free flours. Its earthy, nutty, and somewhat sweet flavor perfectly accents the almond and fruit preserves layered within the bars; and its fine-grained texture contributes to an extra-tender crust and topping.

Crust and Topping


  • 1/2 cup jam or preserves (not jelly)


  1. Preheat the oven to 350°F. Lightly grease an 8" or 9" square pan.
  2. To make the crust and topping: Mix together all the ingredients until crumbly.
  3. Place 2/3 of the crumbly dough into the pan and press it into an even layer.
  4. Spread the jam or preserves evenly over the crust, then crumble the remaining dough on top of the jam layer.
  5. Bake the bars for 35 to 45 minutes, until the top is a rich golden brown.
  6. Remove the bars from the oven, cool them in the pan for 5 minutes, then cut them into 16 squares.
  7. Allow the bars to cool fully before serving.
