Herb & Dill Bread


This recipe, which makes a golden-hued hot-and-spicy bread, is the perfect foil for a cool summer salad.

Choose your measure:

  • 1 1/2 teaspoons active dry yeast (See "tips", below.)
  • 2 cups King Arthur Unbleached All-Purpose Flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 large egg
  • 1 tablespoon vegetable oil
  • milk
  • 1/2 cup shredded mozzarella cheese
  • 1 heaping teaspoon dill seed
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon freshly ground black pepper


  1. Put the yeast, flour, sugar and salt in the pan of a bread machine.
  2. Put the egg and oil in a 1-cup measure, then add enough milk to make 1 cup. Pour this mixture into the bread pan.
  3. Add all of the remaining ingredients at once, or wait until your bread machine prompts you to do so.
  4. Bake the bread on a normal cycle.
  5. Store the bread, well-wrapped, for up to 5 days at room temperature or up to 3 months in the freezer.
