Magic Buckle

As American (and old-fashioned) as apple pie, a buckle is a wonderful combination of fruit and cake. Consider it magic because what starts as an simple blend of batter and fruit becomes in the oven something much greater than the sum of its parts: a delicious coffeecake-like confection.

Choose your measure:

  • 1/2 cup sugar
  • 1 1/4 cups King Arthur Unbleached All-Purpose Flour
  • 2 teaspoons baking powder
  • heaping 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract or Princess Cake & Cookie Flavor
  • 3/8 cup (6 tablespoons) butter, melted
  • 4 cups sliced fruit*
  • 3/4 cup sliced almonds
  • 1/4 cup sugar or 3 tablespoons Sticky Bun Sugar (for topping)
  • *A combination of apples and pears is good, as is any pie-type fruit: peaches, berries, sweetened rhubarb, etc.


  1. Preheat the oven to 400°F. Grease a 2-quart casserole or 9" x 9" baking pan.
  2. Whisk together the 1/2 cup sugar, flour, baking powder, salt, and spices.
  3. Whisk in the eggs, milk and flavoring until the batter is almost smooth.
  4. Add the melted butter and stir until blended.
  5. Pour the batter into the prepared pan.
  6. Arrange the sliced fruit over the batter, and sprinkle the sliced almonds over the fruit. Finally, sprinkle the almonds with the 1/4 cup of sugar or 3 tablespoons sticky bun sugar (which will form a clear, shiny crust).
  7. Bake it for 40 to 45 minutes, until a cake tester inserted into the center comes out clean.
  8. Store, well-wrapped, for up to 5 days at room temperature.
