Streusel Topping Recipe

This crumbly, buttery topping relies on rolled oats for body. Sprinkle it atop coffeecake, a single-crust fruit pie, muffins, or quick bread for added flavor and crunch.

Choose your measure:

  • 1/2 cup King Arthur Unbleached All-Purpose Flour or King Arthur White Whole Wheat Flour
  • 1/4 cup brown sugar (packed), light or dark
  • 1/4 cup old-fashioned rolled oats or quick oats (not instant)
  • 1/8 teaspoon salt
  • 4 tablespoons butter, at firm room temperature


  1. Whisk together the flour, sugar, oats, and salt. Work in the butter, mixing until coarse crumbs form.
  2. Sprinkle topping evenly over the top of muffins, quick bread, coffeecake, etc. before baking.
