Zucchini Chocolate Chip Pecan Bars

These moist, rich bars, packed with chocolate and topped with salty pecans, are nonetheless light and "cakey" — a pleasing combination of textures and flavors.

Choose your measure:

  • 5 ounces zucchini, cut in chunks*
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 cup brown sugar, firmly packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup King Arthur Unbleached All-Purpose Flour or King Arthur White Whole Wheat Flour
  • 1 1/2 cups quick rolled oats
  • 2 cups semisweet or bittersweet chocolate chips
  • 3/4 cup chopped pecans, for topping
  • *If you don't have a scale, 5 ounces of zucchini is about 5" of a small/medium (8") zucchini.


  1. Preheat your oven to 350°F. Lightly grease a 9" x 13" pan.
  2. Place the zucchini, vegetable oil, and egg into the work bowl of a food processor, and process until smooth.
  3. Add the brown sugar, baking powder, baking soda, salt, vanilla extract, and flour, processing briefly, just until thoroughly combined.
  4. Add the oats and chocolate chips, pulsing just until combined.
  5. Spread the mixture into the prepared pan. Sprinkle the chopped pecans on top, and dust with some fine salt or sea salt, your preference.
  6. Bake the bars for 25 to 30 minutes, until a toothpick inserted into the center comes out clean, or with a few moist crumbs clinging to it. Remove them from the oven, and cool right in the pan before cutting and serving.
  7. Store at cool room temperature, well-wrapped, for several days; freeze for longer storage.
  8. Yield: 2 dozen bars.
