I purchased an Atlas pasta machine over 30 years ago, and it will undoubtedly outlive me. It's a kitchen heirloom piece. I was also fortunate enough to get it along with all of the accessory cutters for it, including the ravioli and cannelloni attachments. Newer versions are set up to accept a motorized driver to you don't have to manually crank the rollers, but IMHO, that's part of the fun. It is extremely simple to use, and takes minimal time to master. The biggest challenge is to determine what type of pasta to make. lol I also have a pasta extruder, but these two devices have very different purposes. The extruder can produce things like macaroni or gnocci, and the edges of the pasta are feathered due to being forced through a die as part of the extrusion process. For some recipes, that's great as it produces a better edge for catching and holding sauces. But for general, everyday use, I think the Atlas is the "go to" machine for most long pastas. I would also recommend an accessory made by Marco that is a stand for draping your pasta for drying after you've run it through your machine. That's something the great folks here at King Arthur may look into as a product to sell along with the Atlas itself. I highly recommend the machine, and if you're into variety, there are close to 10 different attachments you can obtain to work with this machine, and that gives you a high degree of variety in your pasta production options. Nothing better (or faster) than homemade pasta. Additionally, if you wish, you can add things like pesto or tomato or peppers into the dough mix as part of the moisture content. You can even make sweet pasta that you can serve with a chocolate sauce... think about that as an outside the box pasta option.

This is the machine that I learned how to make pasta on 30 years ago and there is no better brand IMHO. Although I now prefer using my KitchenAid pasta roller to give me hands free, this unit is still in my pantry as an option for use without the need for electricity. Easy to use...the learning curve is not in this unit but in your dough...make the perfect dough and you will start out with perfection. Everyone should at least know how to make your own pasta...in the depression it was what kept many families well fed on little money. This little unit is a great way to feed a family well on a tight budget...and the price is well worth it as the quality is excellent. You will have this unit to pass on to your kids...

I cannot believe how easy this machine was to use and how pleased I am with my success. I have beautiful noodles tonight for dinner! I used the "fresh pasta" recipe on this site with the Italian- style flour.

Very easy to use. I found a good recipe for pasta online and adjust it using the Perfect Pasta Blend as part of the flour. This device makes rolling out my own linguini easy to do even by myself, as long as you use plenty of flour to keep it from sticking.
