Dutch-process or natural cocoa: which should you use, if your recipe doesn't specify? If the recipe doesn't include any leavening or uses baking powder, choose any cocoa: Either Dutch-process, or our Triple blend, which offers the best of both worlds. If the recipe uses baking soda, choose our Triple Cocoa Blend.

Exactly what I was looking for, deep, rich & chocolaty. I use it to make *Wellesley Fudge Frosting (or a version of it). *Here's the best fudge frosting recipe ever, if you're interested. (Full disclaimer, it isn't my creation but I don't know who to credit.) Sift together 2x: 3 1/2 c. powdered sugar & 1/2 c. black cocoa powder. Set aside. In a lg. pan, combine 1/2 stick sliced butter, 1/2 tsp. salt, 1 1/2 c. packed brown sugar, 1/2 c. half n' half. Cook over medium heat, stirring constantly, until first few bubbles pop. Immediately reduce heat to low, stirring constantly for app. 8 min. Add in the following, stirring well/melting after each addition: 1/2 stick sliced butter, 1 4oz. 60% chocolate bar, chopped, 1 tsp. vanilla & 1/2 c. half n' half. Remove from heat, w/ a mixer on low speed, add in sugar/cocoa mixture 1 c. at a time. After all is incorporated, mix on med. for app. 1 min. Allow to cool at room temp. (You can refrigerate if you need to firm it up for piping.)
I purchased this item online. The expiration date was only a few months away! I called customer service (as most of the items that I ordered had very short "best by" dates. A huge disappointment. Customer service told me two things: 1) Store your product in your freezer to extend the shelf life. I do not have room in my freezer for a dozen King Arthur Products 2) "Well, I guess we both learned something". REALLY? She may have learned to tell the customer to store all of their soon to be expired products in the freezer. What did I learn? DO NOT purchase King Arthur products online. This was a HUGE disappointment - both with the old product that I am stuck with and the poor customer service response. If I hear "Well, I guess we both learned something" one more time... she repeated it multiple times as if I were some child - until I finally just gave up - so I guess her tactic worked as it got rid of me, but it also got rid of a long time customer. If you are planning for future use of the product like I was, DON'T SHOP for King Arthur Products ONLINE. Go to a local retailer and check the dates for yourself.

Amazingly dark and rich. The label advises that this cocoa is best used in small amounts, substituting out the regular cocoa for it to make the total required. It's absolutely delicious that way. I use it in making chocolate ice cream (recipe calls for 2/3c cocoa, so I use about 1/4c of this black cocoa). It's also stellar in brownies and baked goods. I'm not sure why, but it does seem to make the finished products a little more gooey in a very pleasing way.
My mom bought this for me to try in chocolate recipes. It is outstanding!! This Black Cocoa has an intense and rich taste compared to no other! I recommend this to anyone who truly loves chocolate! Excellent quality.
Bought this KAF brand at SUR LA TABLE. It tastes bitter and burned. Friends and family agree so haven't used it again.We're sorry this one wasn't right for you. Since it's heavily alkalized, or dutched, it does have a stronger taste. I suggest keeping it and using it in conjunction with other milder cocoas, about 25% of the total cocoa in a recipe. This is by far the best cocoa I have ever baked with! I am a cook and used this in my special chocolate cake I like to make and it was outstanding! Far from dry like other cocoa can make it. I also used a tsp of your espresso powder and now I don't thjnk I can make this recipe with out these two items !
Would it be an overkill to use this along with expresso powder to enhance the flavor of cocoa powder?If you're a chocolate-lover looking to make a rich, intense chocolate dessert, then you're welcome to use the two ingredients together! If you want to mollify the effects of the black cocoa slightly, consider using it in conjunction with another cocoa powder. It will impart a deep chocolate flavor without being overbearing. The product is fine - the packaging, not. I made the dark chocolate brownies recipe (which is truly excellent as the reviewers state). I decided to darken with a small amount of black cocoa. I resealed the package with the zipper lock and turned it upside down over the sink to dislodge cocoa that remained outside the zipper. Surprise - the zipper didn't hold, and I lost half of the brand new package into a wet sink. Closing a zipper lock on bags is something we all do regularly, so it isn't like I don't know how to do it effectively. I got this on a whim when the cost of the black cocoa brought me to "free shipping" and what a delightful whim. This has a very deep chocolate flavor and a heavenly scent. As the description recommended I started using it very sparingly but it adds such a wonderful depth of flavor that I now use it 50/50 with other cocoa. This is a very fine powder (think powdered sugar) and does have a tendency to make a mess, I'd recommend transferring it to a locking container to avoid the inevitable poof when opening the bag--not just to avoid cleaning but not to waste this fabulous product. So far this has worked wonderfully in drop cookies and cakes, I haven't tried it in bar cookies but I don't see any reason why it wouldn't work. When I contemplate the joys of baking with black cocoa I am forced to ponder all the lost years as well. How could I have NOT known about this?! Bottom line, you want this in your pantry.
This cocoa can be used to make a true pumpernickel bread. It will add a slight bitterness that is great as well making the bread the deep, dark color that is beautiful and rich. Not much is needed so use sparingly.
