This 9½" cutter makes short work of big jobs. Open or close it to just the size you need, and tighten the wing nut on the setscrew for consistent cutting. Make perfect turnovers or croissants, cut fondant into ribbons for draping on cakes, or cut squares to make ravioli or tortellini. Expands to 20" wide.

Very good, solidly made version of this tool. The blades are much sturdier/heavier and sharper (almost as sharp as a knife) than the cheaper versions you see on Amazon and elsewhere, which more 'crush' their way through than 'cut' - this is particularly important in things such as croissant and puff pastry doughs, where a crushed edge prevents a full rise. All parts are high end stainless steel, and even though they say 'hand wash and dry only,' I see no reason why it would not be dishwasher safe, and I do run it through the dishwasher myself (after cutting sticky stuff such as homemade marshmallows), with no problems so far. Also, those complaining about the price below are probably not used to paying for high quality stainless steel - not all 'stainless steel' is made equal, and the ones sold on Amazon and elsewhere are really cheap versions. The only issue (and it is a very minor one overall) is the blades have a bit of a 'wobble' to them, due to being loose enough on their individual shafts to do so. This is probably unavoidable, unless they were to use some sort of sealed bearings to lock them vertically in place yet still allow them to roll as freely as they do now. Doing so would probably double the price, so I understand the reasoning behind the current construction, and, as I noted, it's a very minor problem that is only noticeable in the final food product if you have OCD :).

I AGREE WITH ESTHER. I just love this tool. Well made and is a great marker not only for the kitchen but for the shop. I especially like it for pasta, bread doughs , pastries. It can cut thinner products bu excels as a marker. It is expensive but when you look at the quality you can see why

To the reviewer that is wondering why this item is more expensive than the Ateco product - this is a series of sharp wheels to cut through dough with precision. Ateco and other manufacturers make products that create an ersatz "lattice look", which is not what most folks imagine when they think of a lattice crust pie. After you use this device to cut your pie cough into strips, you must then interweave those strips to achieve a lattice pie crust - but it will be the real thing. I wouldn't give those other devices a second look.

Prior to getting this cutter I could never get my bars to come out even. Using a ruler to score the bars was always a little off. Now I put the wheels either along the inside or outside of the pan and get even markings. If the bars are thin enough I can cut with this cutter. Great investment.

Great quality with a good heft to it. I make doggie cookies so my dough is too tough for it, but it scores perfectly which is all I can ask. I'm sure it's probably great for pastas & softer doughs. I'm not sorry I spent the money.

Tried again and again to get the name of the company who makes this cutter. It costs twice as much as similar style cutters on Amazon. WHY? Who makes these cutters? Is the quality really twice as good? KAF customer service won't give this information. The cutter looks similar to the Ateco 5 wheel cutter. If it is Ateco why does it cost twice. Your explanation please!
The difference may be that we stand behind our return policy - if a product fails to work as intended in your kitchen despite our testing in our kitchen, then we'll take back the product and replace or refund. Irene@KAF

I saw this used by one of New Orleans great chefs and he talked about some of the ways he used it and I immediately started thinking about ways it would be helpful in my kitchen. I used it to cut rolled out dough for Butterflake rolls at Christmas and my adult children were fighting for a chance to try it! Not a kitchen necessity but very helpful and great fun to use.
