For Chewy Ginger Drop Cookies:

You will need:

  • ½ cup, 1 stick, butter, softened
  • 1 large egg
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  1. Preheat oven to 375°F. Grease or line a baking sheet.
  2. Combine all ingredients and mix until a smooth dough forms.
  3. Shape dough into 1" balls, roll in sugar and place on prepared baking sheet.
  4. Bake cookies for 12 to 15 minutes until crackled, dry and set on surface. Allow to cool on baking sheet for 5 minutes and then transfer to a rack to finish cooling.

Yield: about twenty 2½” cookies
