Nice to have the second rack. It should probably be standard, but I'm sure they like to keep the price down, and not all will use it.
Bought this month's ago to go with my proofer (which was a 2014 Christmas gift from my husband). Fabulous design. I can put close to 60 small panettone molds in it or 16 small loaf pans. Great addition to a great proofer.

I proofed 32 dinner rolls using two 13"x9" pans using the rack. There is plenty of room between the pans so no problem there. Using the hanging supports makes the box more rigid so now I use the supports even when I only need one rack. I also was a little puzzled without directions but figured it out. In my opinion the box and the rack where designed by a genius. I am very pleased with both the box and second rack.
This handy shelf doubled the capacity of my proofer, as I can now stack up to 4 pans in it. While there were no instructions included, the simplicity of the design was readily apparent and I was able to assemble it and begin using it right away with no difficulty whatsoever. The legs on the shelf are a nice bonus, as they allow the shelf to be used as a cooling rack, but there's no way to prevent them from falling down except for flipping the shelf over and using it that way. This hasn't impacted my use of the shelf one bit, however.
I just received the extra shelf in the mail and I haven't actually used it yet so these are just my first impressions but I think they might be helpful to other people considering the purchase. The rack comes in three pieces, two metal pieces that hang on either inside edge of the proofer box and the rack itself. You hang the metal pieces in the middle of the box sides and place the extra rack shelf on top so that the metal lines of the rack settle into the notches on the metal pieces. Like the box itself, the design seems very good. As another reviewer mentioned, there are no directions, but after a few minutes fiddling with it, I was able to figure it out without too much trouble. The rack also has little fold down pieces that I believe are meant to be legs, letting you use the rack on a counter as a cooling rack as well. While I like that it could have dual use, I do wonder if these legs will get in the way of rising dough on the lower level. If I find that they do, I may remove them. I am a little disappointed however about what will fit on the racks. While the description shows the rack allowing you to stack two standard sized bread loaf pans, (8 1/2" x 4 1/2"), I actually have 9" x 5" loaf pans. They fit fine in the box, but they are 3" high and so nearly 1/2" taller in size than standard pans, so bread rising in one of these pans is going to be really tight. But this was my error in not measuring before I made the purchase. Unfortunately, I compounded my error when I purchased a 2 Qt 7" x 4" high dough doubler, that I foolishly thought would fit with the rack in place as well as a pair of 1 Qt 5" x 5" dough buckets. Again, my error. What was I thinking? I can still use these in the proofing box, but not with the rack in place. While I'll need to rethink some of how I planned to use this, I still think that the extra rack will be useful when proofing things like rolls (on small sized sheet pans) or buns (in round cake pans.) If you are planning to purchase the extra rack, I would suggest that you do what I didn't do: measure! There is about 3 1/2" in height space on the top and bottom levels when the rack is in place. So you'd want to make sure that the container you plan to use in it plus any additional rising height beyond it, is going to be less than about 3 1/2".What a thorough and descriptive review for the Stacking shelves! I've been staggering pans and using glasses for support. Simply cannot wait for this item to be restocked. Wishing that I had made my purchases before the Christmas shopping season.
I loved the bread proofer so ordered the second shelf, It came with no instructions and I have not yet figured out how I can stack 2 levels of standard bread pans in it.
