Pumpkin Cheesecake Bars. For a sweet, seasonal twist, bake pumpkin cheesecake bars. Simply combine 1 tablespoon of pumpkin pie spice with 1 cup (9½ ounces) of pumpkin purée (not pumpkin pie filling!), and stir into the prepared vanilla bean cheesecake bar mix filling (following the mix directions as instructed). Bake the cheesecake for 45 to 55 minutes.
