Keto-Friendly Hot Chocolate

When the temperature starts dropping, nothing warms you from the inside out like a mug of hot chocolate. This keto-friendly option, made with baking sugar alternative, derives its luxurious, rich mouthfeel from just a touch of xanthan gum. Garnish with either a keto-friendly marshmallow or some keto-friendly whipped cream and a sprinkle of cocoa powder. Or gild the lily with a keto-friendly chocolate stirring stick for an extreme level of decadence!

Instructions

  1. To make the hot chocolate mix: Sift together all the ingredients and stir until well blended. Store at room temperature in an airtight container. 

  2. To make the stirring sticks: Gather 24 wooden pop sticks or lollipop sticks and line a mini-muffin pan with papers.

  3. In a small saucepan set over medium-low heat, melt the butter and unsweetened baking chocolate. Stir until smooth. Whisk in the cream.

  4. In a small bowl, whisk together the baking sugar alternative, cocoa, and salt. Whisk into the butter mixture. Bring to a boil, then remove from the heat and stir in the vanilla.

  5. Portion the sauce into the wells of the mini-muffin pan; a heaping teaspoon scoop works well here.

  6. Lay the end of a stick into the melted chocolate in each well, submerging it slightly, and place in the refrigerator to set. Store, covered, in the refrigerator for up to 3 weeks.

  7. To make the vanilla or chocolate whipped cream: Place all the ingredients in a bowl and whip until the cream holds a medium peak. Store whipped cream, covered, in the refrigerator for up to two days.

  8. To make a mug of hot chocolate: Add 4 tablespoons (30g) hot chocolate mix to 1 cup (227g) hot unsweetened almond milk (or the keto-friendly milk of your choice), stirring to dissolve.

  9. For an added layer of decadence stir the hot cocoa with a chocolate stirring stick, letting the chocolate slowly dissolve.

  10. Garnish with vanilla or chocolate whipped cream and a sprinkle of cocoa powder, if desired.
