Savory Cheddar-Parmesan Waffles

With their melting pockets of cheese, these 100% whole-grain waffles are delicious with over-easy or scrambled eggs at breakfast, or with fried chicken or sautéed garlicky mushrooms at dinner. Quinoa flour adds a touch of fresh whole-grain flavor, enhancing their versatility with savory accompaniments.

Savory Cheddar-Parmesan Waffles


  1. Preheat a waffle iron while you prepare the batter.

  2. Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. 

  3. In a large mixing bowl, whisk together the flours, baking powder, Pizza Seasoning, and cheese powder.

  4. In a separate bowl or measuring cup, whisk together the egg yolks, milk, and butter.

  5. In another bowl, beat the egg whites until stiff peaks form.

  6. Mix the egg yolk mixture into the dry ingredients, stirring just until combined. Fold in the cheeses followed by the beaten egg whites.

  7. Scoop the batter into the hot waffle iron. Cook the waffles as directed in the iron’s instructions.

  8. Serve waffles immediately, or keep them warm in a 200°F oven. Freeze any leftover waffles for up to 1 month.
